Flax

Flax is an ancient crop that is in high demand today because of its nutritional benefits. Flax seed is high in dietary fiber. Flax seed and flax seed oils contain high concentrations of Omega 3, with anti carcinogen lignans. Flax particularly popular as an ingredient in health food, organic foods and nutritional supplements.
Flax has also gained new markets as a premium value specialty feed. Recently flax meal has begun to be incorporated into laying hens feed rations to yield eggs high in Omega 3. One large Omega3 egg is said to have 7 to 10 times the amount of Omega 3 as a large conventional egg.
North Dakota is the largest production state for flax in the U.S Minnesota and South Dakota are notable flax producing states.
