Canola

Canola is one of two primary versions of rapeseed plants that has become a major oilseed crop in North America and other parts of the world. Originally developed in Canada, canola is noted for its nutritional benefits as a cooking oil that has a favorable level of fatty acid, with low levels of saturated fat, higher levels of monounsaturated fat, and moderate levels of polyunsaturated fat.
Canola was originally naturally bred in Canada to have much lower levels of erucic acid than its parent, rapeseed, a member of the mustard seed family. There are both non-GMO and GM herbicideresistant varieties of canola.
North Dakota is the leading canola producing state in the U.S. Minnesota and South Dakota are also significant sources of canola production.
