Buckwheat

Buckwheat is a specialty seed bearing grain that is a notable food source worldwide, and growing in popularity in the health food industry in the U.S. Buckwheat is strong in manganese, tryptophan, and magnesium nutrient content. It is considered helpful in lowering cholesterol and aiding blood sugar control.

An old crop grown in the U.S. since colonial days, buckwheat declined to minor crop status, but has seen a resurgence in interest in recent years. It is grown in Minnesota and the Dakotas. Until the recent interest in buckwheat for human food, it was used for livestock feed. Buckwheat today is used in breakfast cereals, is milled into flour for pancake mixes, and is exported to Japan for making buckwheat noodles.
